We carefully select mature agaves of the Salmiana variety, which have grown for at least 10 years in the highlands of San Luis Potos\u00ed.<\/span><\/p>\n

The leaves of the agave are cut, leaving only the heart, known as “pi\u00f1a”. Which weighs between 40 or 50 Kg each.<\/span><\/p>\n

We bake the agave pi\u00f1as, during this process the pineapple is ready to release all its honey and then give us a delicious mezcal through fermentation.<\/span><\/p>\n

The cooked pineapple goes through a mill to collect all its honey, and squeeze it until only the sugar is left.<\/span><\/p>\n

We let the honey ferment naturally, the time of this process varies depending on the climate.
