Fabrication process

At Destilados del Centro, we are passionate about mezcal and we take pride in producing it in an artisanal way, using traditional methods that have been passed down from generation to generation.

Harvest

We carefully select mature agaves of the Salmiana variety, which have grown for at least 10 years in the highlands of San Luis Potosí.

Jima

The leaves of the agave are cut, leaving only the heart, known as “piña”. Which weighs between 40 or 50 Kg each.

Cooking

We bake the agave piñas, during this process the pineapple is ready to release all its honey and then give us a delicious mezcal through fermentation.

Grinding

The cooked pineapple goes through a mill to collect all its honey, and squeeze it until only the sugar is left.

Fermentation

We let the honey ferment naturally, the time of this process varies depending on the climate. It is a stage where you see, hear, smell, and appreciate all the work of the bacteria.

Distillation

All our musts (honeys) go through double distillation. Obtaining a high quality mezcal

Bottling

We package all our products with the proper hygiene and quality standards to get them to our consumers’ tables for tasting.
